Low-temperature fermentation ( 18-20° C )
2nd fermentation in bottles (Traditional method)
Maturation for 22 months.
The Cheverny appellation, in the south of the Loire river, is surrounded by Châteaux such as Cheverny, Chenonceau, Chambord, Blois, Chaumont sur Loire.
The climate is an alternation of continental and oceanic influences, thus making it mild, sunny and only slightly rainy. The soils are siliceous clay and slightly gravelly.
