Managing parcels of Sauvignon Blanc and Pinot Noir, he utilizes manual harvests and natural rhythms to preserve mineral purity. From crisp, lees-aged whites to structured reds, Gilbert’s wines are “enabled” rather than forced, reflecting an open-minded approach that captures the authentic, vibrant emotion of this intimate micro-appellation.
