- Harvest: Manual, with sorting in the vineyard followed by sorting on a vibrating sorting table. 100% destemmed.
- Vinification: Maceration lasts 15 to 18 days for cold pre-fermentation, followed by 5 to 6 days for alcoholic fermentation, with several punch-downs and pump-overs.
- Aging: 10 months in oak barrels (25% new barrels).
