What is Sake?

Sake is a traditional Japanese beverage made by fermenting polished rice with water, koji mold, and yeast. The rice is milled to remove the outer layers, then steamed, inoculated with koji, and fermented in stages. Sake styles vary based on polishing ratio and brewing method, including:
  • Junmai: Pure rice, no added alcohol
  • Honjozo: Small alcohol addition
  • Ginjo: Highly polished and aromatic
  • Daiginjo: Ultra-polished and refined
  • Nigori: Cloudy and unfiltered
  • Namazake: Unpasteurized and fresh

Yucho Shuzo Co. Ltd. 油長酒造

Originally an oil refinery company, Yucho Shuzo established its sake brewing business in 1719. Now widely known for its main brand Kaze no Mori, the brewery focuses on crafting their sakes without pasteurization, charcoal filtration, and dilution to reveal a more “3-dimensional” flavour profile in each bottle. Layers of flavours with residual bubbles becomes a signature in Kaze no Mori.

Hiraizumi Honpo 飛良泉本舖

Hiraizumi Honpo is one of the three oldest breweries in Japan, with over 500 years of history in Akita Prefecture. Their sakes are mostly brewed with Yamahai Fermentation, and acidity plays a key role in the craftsmanship. To open a new path of sake to reach out the younger generation, 27th brewery master Mr. Masaaki Saito dedicated in refining his skills, creating a new brand Hiten as the “neo period of Yamahai sakes.” Like a young bird fluttering in the sky and chirping loudly, Hiten challenges the brave new world.
